This Bacon and Egg Breakfast Tart Will Change Your Brunch Forever

If you’re anything like me, then you start looking forward to planning your Sunday brunch come Monday morning. I’m always on the lookout for new ways to reinvent the breakfast staples, like bacon, bread, and eggs — and this recipe I just found will make an awesome addition to my brunch rotation.

Courtesy of the One Pot Chef, this Bacon and Egg Breakfast Tart is a wonderful baked dish, perfect for weekends with friends. Basically, puff pastry is topped with a sauce of your choice, plus bacon and eggs, then baked until golden and crispy. This recipe is simple and quick, not to mention your friends will be so impressed by the delicious outcome.

1 sheet of frozen ready-rolled puffed pastry (thawed)
3 slices of bacon (chopped into thirds)
2 Tbsp. of sun-dried tomato pesto sauce, marinara sauce, sausage gravy, or a sauce of your choosing
1 eggs (beaten, for brushing)
4 eggs (for tart)
You can also scramble the eggs and pour them over the pastry. And, he doesn’t add this in the video, but I’d top off the tart with a layer of shredded cheese. You know, just for good measure 🙂
